eating "fresh"

one of my goals this month was to eat “fresh”.  for me “fresh” means trying new recipes and introducing a new fruit or vegetable into meals.  heck things might get crazy and i might even cook something other than chicken!


let’s be honest i’m in a food rut and while its nice to have a few go-to meals, i want to expand my repertoire. 


so with renewed enthusiasm here’s what’s cooking this week:


{tuesday} chicken monte cristo & brussel sprouts {i just had these for the first time at the wynn in las vegas and loved them!}
{wednesday} black bean soup & salad
{thursday} leftovers
{friday} kristen out of town = ryan on his own
{saturday} kristen & ryan out of town.  hi leigh!
{sunday} broiled sweet & spicy salmon with pineapple
{monday} tomato-jalapeño cheese enchiladas
